Broad Bean Felafal

Thanks to Liz and Sue for this recipe. Apparently it has been tested with great results at Katoomba Public School using beans from the school garden!

Ingredients

  • 150g baby broad beans (frozen will also do)
  • 4 small onions roughly chopped
  • 1 teaspn ground cumin
  • 1 teaspn ground coriander
  • 2 tablespn chopped parsley (optional)
  • 50 g feta cheese drained and chopped
  • 1 tablespn plain flour
  • 2 tablespn sunflower oil

Method
Boil broad beans till tender. Drain
Put in food processor with onion spices, parsley and feta process till finely chopped.
Divide mixture into 6 Press into patties with floured hands.Heat oil and fry till golden brown

Road Test Feedback…

I used double the quantity of beans and lots more parsley (I had huge amounts of both to use up!) and the felafels tasted absolutely delicious. Really morish. Only question I have is whether you put the flour into the mix or is it just for forming? I had some trouble with them not binding together and falling apart a little bit..
